This East Asian cooking staple is early maturing with small seeds. Mainly grown for dried beans, its creamy texture is prized for use in soups and as a base for a sweet confectionary paste that is known best for its use as mochi filling. This variety is known as the red mung bean for its beautiful burgundy color. Bush varieties do not require trellising. To Harvest: Pick young when the pods are green for fresh eating. For dried beans, harvest the entire plant at the end of the season to hang dry indoors before shelling the beans.
