This root vegetable is in the celery family, but the root is used instead. Hailed in the Mediterranean region, this crop is grown for soups, making vegetable stock, roasting, and even making celery powder. Roots will bulb up and once mature they can be harvested, sliced thinly, then dehydrated and processed into a powder that is rich in vitamins, minerals, and fiber. Can be added to smoothies, soups, or used as seasoning powder for anything you are cooking!
