Amaranth is a super grain packed with omega fatty acids, vitamins, minerals, fiber, and protein. The leaves are edible and used in salads or steamed like spinach. The flowers are deep purple and the leaves are a yellow-green color. The plants grow to be around 3-4 feet tall.
