Lions Mane mushrooms taste like Crab and are gaining attention for their potential health benefit. You can enjoy them in a variety of dishes, from stir-fries to soups.
Lion’s mane is a mushroom called Hericium Erinaceus. It has long spines, measuring over 1 cm or 1⁄2 inch. The plant grows on hardwoods and typically has a bunch of hanging spines. You can harvest the fruit bodies for culinary use.
This is a fun and creative way to grow gourmet mushrooms in your own kitchen. I developed these kits as a way for people to learn a little more about growing mushrooms than your standard mushroom kits will teach you, and no special equipment is required.
The instructions cover two ways of growing them - the first way is to grow them in a bag of pre-cooked rice on your kitchen counter, the second way is to grow them in a bucket of straw. There is enough culture included to try both methods. Regardless of your growing medium of choice, these are fascinating to grow and delightful to cook with.

• Ingredients: We use organic local honey with living mushroom culture in pure water to create our mushroom cultures. They are shelf-stable at room temp for a minimum of six months or can be kept in a very cool area or refrigerator for up to a year.
The kit is meant to be grown on brown rice, but should the grower have a rice allergy, they could also grow them on straw or a variety of other things - instructions included!
