This tuber has grown in popularity from a cult following for its amazingly sweet, crisp texture that is reminiscent of sweet potato crossed with water chestnut. It also is much less starchy than a potato meaning it is low in carbohydrates. One root per plant with roots that grow up to 5lbs each. Pruning back seed pods helps to divert energy into root production.

Love this particular variety

This variety is easy to peel the skin unlike other seeds I have purchased.
It has a long growing season, but the taste is well worth the wait. Definitely will be buying more once available.

EXCELLENT flavor, but really poor germination

1st year growing these but certainly not the last! Sowed seeds early May, indoors in Zone 6b using a heat mat. Only got about 15% germination on these seeds and only about 70% of those survived and grew. Really slow growers. Didn't think I'd end up with anything based on plant size which was maybe only 8-10" tall. (never flowered) Harvested 1st one in mid-Sept. It was about the size of a large beet and far better tasting than I remembered from years ago trying a grocery store one. Pure white flesh, crisp and juicy like an apple, sweet and delicious. Flavor reminded me of raw sweet corn at it's best. So good!
Super long season vegetable but well worth giving it a try.

Already sprouting!

Never thought I'd have the opportunity to grow this! Trying this for its lower carb quality. Already have sprouts coming up.

I have never grown it! I am interested in it for my wife, who is in a low fodmap diet and Jicama has no limits on her diet were turnips, potatoes and many other root vegetables are not allowed or allowed only in small portions.
